Sample Wedding Menu
At Belle Isle Castle all our menus are seasonal. When
choosing your menu all guests must have the same starter,
soup, main course and dessert unless they have special
dietary requirements. Here are some samples of the fine
four-course menus offered at Belle Isle Castle. Prices are
from £45 per person.
Starters:
Salad of baby spinach leaves with crispy bacon,
toasted pine nuts and a creamy Roquefort dressing
Asparagus with crispy prosciutto and parmesan served
with a tomato and olive oil dressing
Twice baked spinach soufflés served with a four
cheese sauce
Spinach roulade with fresh prawns and a creamy
mayonnaise and herb sauce
Wild smoked salmon with a shallot and herb dressing
and fresh leaves
Pears stuffed with a stilton cream and rolled in toasted
hazelnut crumbs
Warm salad of marinated chicken with an orange and
thyme dressing served with fresh leaves and croutons
Warm salad of duck confit with fresh leaves and a
walnut oil dressing
Soups:
Soup of roasted pointed pepper with orange and
basil oil
Thai broth with prawns and herbs
Roast squash and garlic soup
Wild mushroom soup with Madeira
Pear and parsnip soup

Main Courses:
Braised lamb shanks with Madeira served with potato
gratin
Ballotine of free range chicken stuffed with watercress,
potato and pine nuts served with a herb cream and
new potatoes
Boeuf Bourguignon with pastry croutes, french beans
and roast potato
Roast sirloin of Fermanagh beef served with a thyme
jus and fondant potatoes
Roast pheasant marinated with puy lentils and bacon
served with parsnip crisps
Rack of lamb served with redcurrant jelly and a
rosemary jus
Braised shoulder of spring lamb with orange and
rosemary
Desserts:
Belle Isle lemon posset served with summer berries
and black pepper biscuit
Basil panna cotta with fresh raspberry coulis

Vegetarian Menu
Starters:
Salad of baby spinach leaves, ripe pear, toasted pine
nuts and a creamy Roquefort dressing
Asparagus with a parmesan tuille, with a fresh
parmesan, tomato and olive oil dressing
Filo tartlet of goat’s cheese and red onion marmalade
Spinach roulade with roast peppers
Herb crepe stuffed with spinach and mascarpone
cheese
Warm salad of roast plum tomatoes, fresh leaves
and mozzarella
Main Courses:
Braised leeks in red wine with thyme
Gratin of chard and spinach
Chestnuts and mushrooms en croute served with a
Madeira sauce
Gratin of Butternut squash and roasted walnuts
Marrow stuffed with caramelized onions, chick peas,
plump raisins, nuts and Asian spices
Terrine of courgette, peppers, potato and aubergine
served with a sauce paloise (a mint béarnaise)
Pan fried slices of aubergine, curled and stuffed
tomatoes, courgettes, feta cheese, pine nuts, garlic
and herbs
Coffee/tea will conclude each menu. All menus are served
with seasonal vegetables.
Wines and Spirits:
Belle Isle Castle will supply all wines and spirits
throughout the stay. An extensive wine list is available
on request.
